Cinnamon Buns Aunt Mary Style

Pre-Heat Oven to 375

Ingredients

  • 1/4 cup sugar
  • 1 Tbs cinnamon
  • 3 Tbs butter
  • 2 Tbs honey or maple syrup
  • 2 Tbs water
  • 1 package Crescent Roll dough
  • 1/4 cup raisins
  • 1/4 cup nuts (optional

Directions

  1. Cook in small saucepan over medium-low heat until butter dissolves 1st 5 ingredients, stirring constantly.
  2. Open crescent rolls and divide into 4 rectangles
  3. Coat Crescent rolls with heated mix, putting 1 Tbs into each rectangle
  4. Roll up each of 4 rectangles and pinch tightly closed, slice into 3 even pieces each
  5. Place into muffin tins and press down
  6. Bake at 375 for 15-18 minutes
  7. Flip out of tins as soon as done.


Cinnamon Buns Philly Style

Ingredients:
1/2 cup vegetable shortening
2 sticks butter
1 lb. dark brown sugar (divided)
1-2 Tablespoons dark corn syrup
2 cups lukewarm milk
1/2 cup granulated sugar
2 envelopes active dry yeast
1/2 teaspoon salt
2 eggs, beaten
7-7 1/2 cups all purpose flour
1/2 stick melted butter
2 1/2 cups raisins
1-2 Tablespoons cinnamon
1 cup pecans (optional)
3 cake pans

Directions:
Preheat oven
Grease pans
Melt butter and brown sugar to make syrup
If syrup is too thick, add corn syrup.
Divide sugar/syrup among cake pans
Stir milk, sugar, yeast and salt until dissolved
Let stand 3 minutes
Add eggs and shortening
Beat in flour until dough is smooth
Let rise, covered in warm draft-free place for 1 hour or until doubled ( I usually stick in oven)
Punch down dough and divide in 3
Knead until smooth and elastic, about 5 minutes
Roll dough into 1/4 " thick rectangles
Brush dough with melted butter
Sprinkle with remaining brown sugar, raisins and cinnamon
Roll filled dough, jelly roll style, and cut to 1/2 inch to 2" thick (depending upon preference)
Arrange buns flat in syrup in pans - fit snugly
Let rise 20 minutes
Bake at 350F for 30 minutes
Remove pans and invert and let stand
Remove from pans and enjoy!

Frittatas Baked in Muffin Cups

Ingredients:
7 eggs
1/4- 1/2 cup milk
Fresh washed spinach leaves
Fresh tomatoes, or whatever you have handy.
Cheese of your choice
Add your salt, pepper...get creative
Pam ooking spray or greased muffin tin for 12

Directions:
Preheat oven to 375F
Cut up fresh spinach and place in bottom of greased muffin tin.
Add cheese on top of the Spinach, whatever you like.  Feta is good, so is Cheddar
Bake at 375F for about 20 minutes or until centered toothpick comes out clean.
Serve immediately...or go ahead and freeze some of these!  
You can microwave them for breakfast!

Grandpop's French Toast

Ingredients:
2 cups flour
2 cups milk
1 egg
1 Tbs vanilla
6 slices bread
1 Tbs butter

Directions:

Mix together all ingredients (except butter).  Coat slices of bread and fry in butter until
both sides are golden brown.  Jessica says she puts butter and regular sugar on hers,
but her son prefers maple syrup.  Makes about 6 slices.

Oatmeal Peanut Butter Chocolate Chip Breakfast Bars - 6 Smart Points on Weight Watchers


Ingredients:
1 cup Peter Pan Whipped Peanut Butter
3/4 cup unpacked brown sugar
1 1/4 cup oat flour
1/4 cup old fashioned oats
 (make them yourself in 
a blender!)
1 1/2 teas baking powder
1/4 teas salt
1/4 cup + 2 Tablespoons low fat milk
1/4 cup semisweet chocolate chips

Directions:
Vigorously mix together peanut butter and
brown sugar.  


In a separate bowl, mix together remaining
dry ingredients (oat flour, oats, baking powder
and salt.)  


Mix dry ingredients together with peanut butter
and sugar mix.

 
Slowly add milk and fold in chocolate chips.
Bake at 350F for 20-23 minutes.


Serving size 1 bar
Makes 16 servings
6 Smart Points per serving.
I eat this and a banana for a delicious breakfast.

Pineapple Coconut Chocolate
Chip Pancakes

Ingredients:
1 egg
1 cup milk
2 Tbs Coconut Oil
1 1/4 c all-purpose flour
2 Tbs sugar
2 tsp baking powder
1 tsp salt
1 Tbs vanilla
1/3 c pineapple tidbits
1/2 c coconut flakes
1/2 c chocolate chips

Lightly grease griddle and preheat to 375F while preparing batter per directions below.

Directions:

1. In small bowl, beat egg, milk and coconut oil with wire whisk.  
2. Combine flour, sugar, baking powder and salt in large bowl.
3. Stir egg mixture into dry ingredients, mixing until smooth.
4. Fold in pineapple, coconut and chocolate chips
5. Pour 1/4 c batter on hot griddle and when bubbles appear on top and there is browning
at the edge, flip on other side and cook until finished (it won't take as long as the first side.)
Optional: drizzle lightly with Boysenberry syrup

Makes about 1 dozen large, overloaded pancakes.
