Curry Chicken Salad

This is a delightful treat for a summer picnic or any time at all. I am making it to bring with me to work for lunch. Back to Health: Chickpea Vegie Burger

My husband and I ate at Sanaa in Animal Kingdom the other day.  As a  result, I went on a quest to find a Vegie Burger recipe that was similar.  I am not sure if this compares yet, but I found this Middle Eastern Chickpea Vegie Burger in the 2009 November Cooking Light courtesy of Kathy Kitchens Downie, RD.  It looks delicious and I can't wait to try it.  If any of you intrepid souls beat me to the punch, please post if you like the recipe, if you added or eliminated ingredients and what you thought.  Thanks!

Pineapple Coconut Chocolate Chip Pancakes

I know.  These are way off the diet grid.  Off the wagon.  Totally anti-diet comfort pancakes.  They are very yumalicious.  Here's how they started.  I attempted to make pancakes healthy by using coconut oil instead of regular cooking oil, but they needed a little something. Then I added coconut because, you know, it's a fruit. What goes well with coconut?  More fruit.  From Hawaii.  Like Pineapple.  Excellent.  I love chocolate, so I added a little.  YUM.  Now, lightly drizzle with Boysenberry Syrup and Enjoy!  Then start your diet tomorrow.

Chewy White Chocolate Macadamia Nut Lemon Cookies - Like the ones I LOVE at Crispers

Ok. I searched and searched and found this recipe, the closest I could find to the cookies I love at Crispers.  The only problem is the recipe had no lemon so and added just a little lemon zest to make them lemony delicious.  Hoping to bake these up tomorrow!  See the recipe on the Desserts page.

Kathy's Vegetarian Chili

Here we have a delectable vegetarian chili dish.  If you prefer a dish with meat (or carcass, depending on your viewpoint), just substitute your favorite meat or poultry for the vegetarian crumbles.  This is a great foray into vegetarian dining if you want to follow the recipe.  It's packed with protein, flavor and nutrition.

Deep Dish Low Carb Pizza

Laurie Jennings contributed this recipe, so thank you Laurie!  I love pizza and a low carb recipe makes it even more enticing.  At first, I couldn't believe this was low carb, so I checked the carbs in a single slice of pizza and guess what?  There are 36.  That's right 36 big ones.  Compare that with 3 carbs per slice in this decadent tasting treat.  That means I can eat 12 slices before I have the same amount of carbs.  Now I do like pizza, but I'm not sure I can eat 12 slices!  Though God knows, I'll try.  Kidding. Of course, I'm kidding.

By the way, you'll find this recipe on the Entrees page.  Because Pizza is an entree.  I know, it's confusing, right?  Sometimes we eat it for breakfast, serve it for appetizers or even throw down a slice after dinner, like dessert.  But I just thought that most normal people eat it for dinner, ergo the Entree page.  'Nuff said.  Enjoy.

Welcome to The Pope's Bikini

Welcome to The Pope's Bikini, a phrase that accidentally fell out of my mother's mouth to her embarrassment and my great amusement.  At the time, we were trying to think of a name for my sister's store in Brigantine, NJ that ended up being Everyday Art, a store with a mission to sell hand crafted artisan items that was a gorgeous as any store I've seen.  It was a lovely store, but alas, Kathy (the sis) decided that three degree weather was not her cup of tea and decided to migrate herself and her daughters to sunny Florida to keep Mom and me company. Now, I need a name for a blog...The Pope's Bikini is born.  Feel free to comment, make additions and enjoy.
